Pesto/Avo Pasta

  • 200g edamame pasta (edamame pasta was used in which creates a higher protein dish and thus, a more balanced macronutrient dish) that being said, you could use any pasta

  • ½ avocado

  • ⅓ cup vegan pesto

  • Tomatoes

 

METHOD

Mash the pesto and avo together with lemon juice. Boil the pasta till cooked through. Add pesto - avo dressing into the pasta. Add salads to dish such as tomatoes and cucumber should you wish. Would also be great with cilantro, pine nuts or spring onion garnished on top. Serve cold.

 

 

VEGAN PESTO RECIPE

Preparation: 10 minutes | Cooking time: N/A

 

  • ⅓ cup cashew nuts

  • ⅓ cup pine nuts

  • 3 garlic cloves or 1 tablespoon of crushed garlic

  • ¼ teaspoon sea salt

  • ¼ cup hemp oil of olive oil

  • 1 tablespoon lemon juice

  • 2 cups basil leaves
